A good lunch recipe. I often eat it along with a boiled egg or onion raita (onion and curd salad). It tastes yummy. Moreover, it is served without any side dish but tastes amazing when served with a choice of onion raita. The recipe for preparing tomato rice is pretty simple.

Thakali Rice
Instructions

Wash and soak 1 cup basmati rice for 30 mins. Drain and set aside.

Heat ghee in a cooker.

Add cinnamon, bay leaf, fennel, and cardamom. Let them sizzle for a min.

Now add onions and green chilies. Saute until it turns golden brown.

Add in the ginger garlic paste and saute for a min.

Now add in the chopped tomatoes and mix them till its mushy.

Add in all the spice powders, turmeric powder, coriander powder & garam masala and salt. Mix well.

Add in the coriander leaves. Give a quick stir.

Add 2 cups of water and check for salt once again. Add 1/2 tsp fennel powder & stir well.

Once the water starts to boil add in the drained rice.

Close the cooker lid. Wait for 2 whistles in high flame and turn the flame to low and wait for 5 to 7min. Turn off the flame.

Once the pressure is released, open the lid and ta-da, our rice is ready.

Serve with onion raita or chips…
