Dosa is one of South India's most versatile breakfasts — a fermented batter of lentils and rice, cooked crisp and thin or thick and soft (set dosa). Add onions and green chillies and it becomes uthappam; fill it with spiced potato and it's a masala dosa. Best served hot with sambar and chutney, or with podi or any curry on the side.
