The latest addition to my collection of healthy pancakes are these amazing mango pancakes. The soft and fluffy pancakes are so easy to make and taste great. With the addition of mango chunks in the batter, and serving the pancakes with even more mangoes on top, this double mango breakfast is packed with flavor. You can have these pancakes on the table in 20 minutes or less.

How to make mango pancakes recipe?

Mango Pancakes Recipe | Soft and Fluffy | with step by step photos and video. Best fruity pancakes for summer. They are soft and fluffy, easy to make, and are packed with delicious chunks of mango. Serve them for breakfast, add them to the lunchbox, or enjoy them for dessert or brunch! Prepare the smooth batter by adding in all the ingredients in the correct proportion. Further warm up some oil or butter in a skillet on medium to low heat. Add a spoonful of the pancake batter, and cook until the pancake is set and golden on the bottom. Then, flip and cook for about a minute on the other side, or until golden.

Instructions

    Firstly, chop a sweet and ripe mango into small pieces and keep aside. It will be measured around 1 cup.

    For making buttermilk, mix 1 tbsp vinegar with 3/4 cup of milk. Mix well and wait for 2 minutes.

    To this, add an egg, 1 tsp vanilla essence and 2 tbsp melted butter. To make it egg free, add in 1/4 cup buttermilk instead of an egg.

    Mix them well and combine.

    Now add in the dry ingredients one by one: 1 cup maida, 3 tbsp sugar, 1/2 tsp baking soda,1 tsp baking powder and a pinch of salt.

    Mix and form a lump free batter.

    Now add in the cut mango pieces and fold them in. Do not over mix the batter. Now the batter is ready.

    Heat a pan or a skillet over medium flame.

    Brush some butter or oil on the pan.

    Scoop around 1/4 cup batter on the hot pan and cook for about a minute, or until the pancake is set, and golden on the bottom.

    Once the sides are bubbles up, flip, and cook until the other side is golden( around 30 seconds ).

    Set the pancake to the side, and repeat the process until the pancake batter is completely used. Depending on the size of your pancakes, this recipe should make about 8 pancakes.

    Serve them with honey, maple syrup, fruit, ice cream or frozen yoghurt of your choice, or enjoy plain. Top them with some fresh and sweet mangoes.

Notes

Do not over mix the batter.

If looking for an eggless recipe, do add 1/4 cup more buttermilk instead of an egg.
