Which type of ice cream should we use?
- For this recipe to work out the best, use only full cream ice cream. Low fat or non-dairy ice creams wont work for this recipe.
- I am using vanilla flavor here. You can use any flavor of your choice.
Tips and Notes:
- If the cake is turning dark at the top and uncooked in center, cover with aluminium foil and continue baking.
- Use any flavoured ice cream but do not use low-fat or dairy-free ice cream.
- Use whipping cream to taste so yummy.
- Also add food colour, cherries or tutti-fruttis, chocolate chips or any sprinklers to look attractive.
- If using self-raising flour, no need to add baking powder.

If you feel, it is less, add ¼ cup of sugar or even condensed milk to cake batter. While trying this recipe, I felt the cake tastes less in sugar content, but topping it with some cherries made it tastes yummy. You can do the same recipe in an oven or in a cooker also.

Ingredients
2 cups Ice Cream, vanilla / any flavour (use only full cream ice cream. low-fat or dairy-free ice cream do not work)
11/2 cups Maida
2 tsp Baking Powder
Pinch of Salt
2 tbsp Curd
Some cherries & tutti-fruttis
Directions
- Firstly, in a mixing bowl take 2 cups of full cream vanilla ice cream.
- Allow it to melt naturally.
- Meanwhile, prepare the cake tin. Here I am using a 6 inch round cake mold. Brush it with some oil and place a baking paper.
- Once the ice cream is melted, sieve in 1½ cup of maida, 2 tsp baking powder, and a pinch of salt.
- Fold the dough and add 2 tbsp thick curd. Mix well to form a thick batter. Do not worry if the batter is sticky.
- Transfer the ice cream cake batter into cake tin lined with baking paper.
- Level it up with a spatula. Top it with some cherries and tutti-frutti.
- Place a stand and a plate in a kadai. Preheat the kadai for 10 minutes over a low flame. After 10 minutes, place the cake tin and bake the cake for 25 to 30 minutes over a low flame. (or bake the cake in preheated oven at 180 degree celsius or 356 degree fahrenheit for 25 to 35 minutes.)
- To check the cake has baked completely, always insert a toothpick at the centre and see if it comes out clean. Else bake for 5 more minutes.
- Cool down the cake completely. Demold the cake.
- Slice the cake once cooled completely.
- Finally, enjoy eggless ice cream cake or store in an airtight container for 2 to 3 days.
