A good lunch recipe. I often eat it along with a boiled egg or onion raita (onion and curd salad). It tastes yummy. Moreover, it is served without any side dish but tastes amazing when served with a choice of onion raita. The recipe for preparing tomato rice is pretty simple.

Ingredients
1 cup of Basmati Rice
2 tbsp Oil/ ghee
1 inch Cinnamon stick
3 to 4 Cardamom
1 Bay leaf
2 to 3 cloves
1 star annise
1 cup onion thinly sliced
2 to 3 green chilies
1 tbsp ginger garlic paste
2 cups of tomatoes finely chopped
1/4 tsp Turmeric Powder
1/2 tsp Garam Masala Powder
1/2 tsp fennel powder
Salt to taste
Some Coriander Leaves finely chopped
2 cups of water
Directions
- Wash and soak 1 cup basmati rice for 30 mins. Drain and set aside.
- Heat ghee in a cooker.
- Add cinnamon, bay leaf, fennel, and cardamom. Let them sizzle for a min.
- Now add onions and green chilies. Saute until it turns golden brown.
- Add in the ginger garlic paste and saute for a min.
- Now add in the chopped tomatoes and mix them till its mushy.
- Add in all the spice powders, turmeric powder, coriander powder & garam masala and salt. Mix well.
- Add in the coriander leaves. Give a quick stir.
- Add 2 cups of water and check for salt once again. Add 1/2 tsp fennel powder & stir well.
- Once the water starts to boil add in the drained rice.
- Close the cooker lid. Wait for 2 whistles in high flame and turn the flame to low and wait for 5 to 7min. Turn off the flame.
- Once the pressure is released, open the lid and ta-da, our rice is ready.
- Serve with onion raita or chips…
