Here in South India, we prefer idlis &amp; dosas mainly on our breakfast course.  Though they originated in South India, idlis and dosas have gained nation-wide recognition now.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">What is Idli &amp; Dosa?<\/h4>\n\n\n\n<p>For those who does not know, idli is a steamed cake made with a rice and lentil fermented batter. The same batter is also used to make a crepe called dosa. Based on the fillings we keep on dosas we can make a variety of dosas.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">How Idli-Dosa batter is made?<\/h4>\n\n\n\n<p>First things you have to keep in mind is :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>The ingredients and proportions for idli\/dosa batter <\/li><li>Consistency of batter and fermentation time<\/li><li>Variations of dosa and idli batter consistency<\/li><\/ul>\n\n\n\n<p>Let us see the ingredients needed to make batter:<\/p>\n\n\n\n<p><strong>What kind of rice to use?<\/strong><\/p>\n\n\n\n<p>When you go to the Indian grocery store, you will find \u201cIdli Rice\u201d which is specifically meant for idli\/dosa batter. It is a kind of fat, short-grained, parboiled rice. You can even use parboiled rices too.<\/p>\n\n\n\n<p><strong>What kind of urad dal to use?<\/strong><\/p>\n\n\n\n<p>De-husked black gram, either whole or split, are to be used.<\/p>\n\n\n\n<p>In addition to these main ingredients, I prefer adding fenugreek seeds &amp; poha\/rice flakes. This makes a difference in your idlis &amp; dosas for sure. Adding fenugreek helps in fermentation and it also helps in giving the dosa a nice brown color. <\/p>\n\n\n\n<p><strong>When to add salt?<\/strong><\/p>\n\n\n\n<p>My personal experience is to add the salt before fermentation.<\/p>\n\n\n\n<p>Traditionally, rice and dal are soaked and ground separately, then mixed together, and allowed to ferment. A wet stone grinder is the best tool for this job.&nbsp;But you can use mixies or blenders too for this grinding process.<\/p>\n\n\n\n<p><strong>How to ferment the batter<\/strong>?<\/p>\n\n\n\n<p>The batter needs a warm place in order to ferment. If you live in a warm place, you can leave the batter on a table \/ preferred area and it will ferment. Skip this step if you are using cooked rice. You only need either of these ingredients, not both.<\/li><li id=\"wpzoom-rcb-direction-step-447\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Grinding<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-459\" class=\"direction-step\">I am using a wet grinder for grinding. First of all, wash the grinder &amp; stones properly.<br \/><\/li><li id=\"wpzoom-rcb-direction-step-550\" class=\"direction-step\">Now add in the soaked urad dal into the grinder. Always remember do not pour the water at a time while grinding urad dal.<img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"500\" src=\"https:\/\/desertfoodfeed.com\/wp-content\/uploads\/2020\/06\/20200606_162752.jpg\" class=\"direction-step-image\" alt=\"idly dosa batter\" title=\"20200606_162752\" \/><\/li><li id=\"wpzoom-rcb-direction-step-672\" class=\"direction-step\">The amount of water will depend on the type of rice\/dal you use. So, start with a lesser amount, and add more water as needed. Add in the water at intervals.<\/li><li id=\"wpzoom-rcb-direction-step-830\" class=\"direction-step\">Grind to smooth consistency (a fine sand-line gritty texture is also fine).<br \/><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"500\" src=\"https:\/\/desertfoodfeed.com\/wp-content\/uploads\/2020\/06\/20200606_163927.jpg\" class=\"direction-step-image\" alt=\"idly dosa batter\" title=\"20200606_163927\" \/><\/li><li id=\"wpzoom-rcb-direction-step-906\" class=\"direction-step\">May be around 15-20min to grind the urad dal to a smooth texture.<\/li><li id=\"wpzoom-rcb-direction-step-972\" class=\"direction-step\">Once done add in the soaked rice, fenugreek seeds &amp; poha to the grinder. (This is how I do. I grind both dal &amp; rice together &amp; till now I had never seen any failproof in this method.)<img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"500\" src=\"https:\/\/desertfoodfeed.com\/wp-content\/uploads\/2020\/06\/20200606_164115.jpg\" class=\"direction-step-image\" alt=\"idly dosa batter\" title=\"20200606_164115\" \/><\/li><li id=\"wpzoom-rcb-direction-step-1156\" class=\"direction-step\">Add water in between &amp; grind it to a smooth paste.<img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"500\" src=\"https:\/\/desertfoodfeed.com\/wp-content\/uploads\/2020\/06\/Webp.net-compress-image-3.jpg\" class=\"direction-step-image\" alt=\"idly dosa batter\" title=\"Webp.net-compress-image\" \/><\/li><li id=\"wpzoom-rcb-direction-step-1208\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Fermentation<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-1224\" class=\"direction-step\">Pour the batter into a large container. Make sure to fill the container only halfway, to allow room for the batter to rise during fermentation. If you live in a warm place, you can leave the batter on a table \/ preferred area and it will ferment. Otherwise, idlis will become hard.<br \/><\/li><li id=\"wpzoom-rcb-direction-step-2075\" class=\"direction-step\">Lightly grease the idli molds with a few drops of oil\/ghee. Pour the batter to fill the molds. Slightly under-fill the molds so that the idlis have room to rise.<br \/><\/li><li id=\"wpzoom-rcb-direction-step-2236\" class=\"direction-step\">Place the molds in the steamer vessel, cover with the lid, and cook for 8-9 minutes. Sprinkle a few drops of water, if it sizzles, the pan is ready.<\/li><li id=\"wpzoom-rcb-direction-step-15916862132311318\" class=\"direction-step\">Pour a ladle-full (around \u00bc cup) of batter in the center of the dosa pan. Starting at the center, quickly make concentric circles of increasing diameter with the rounded cup of the ladle.
