Why is it called Bullseye egg or single fried egg?
A fried egg is commonly referred to as a poached egg in Indian English. In central and northern India’s English-speaking middle classes and mid-level restaurants, single-fried refers to sunny side up (also known as a bullseye) and “double-fried” to over hard.

The fillings used here are very simple and you can vary them based on your taste accordingly. You can veggies of your preference too. The sauces I preferred in this simple recipe are as follows:

The recipe uses single fried egg or bullseye egg inside the fillings. Firstly, the eggs are toasted until lightly golden and crusty. Then spread a thin layer of sauces and a lettuce leaf over the bread slice. Place the single fried egg over the other bread slice. Place the other slice of bread on top and press it gently. Fried Egg sandwich is ready.

Ingredients
1 tsp Butter
2 Bread Slices (White or Brown)
1 tbsp Oil
1 Egg
Salt as required
Pepper as required
1 tsp Ketchup
1/2 tsp Mayonnaise
1/2 tsp Mustard Sauce
Lettuce Leaf
Directions
- Heat a pan. Spread some butter and slightly toast the bread slices on both sides. Flip and toast until slightly golden crust os obtained.
- Transfer them to a plate.
- Now heat 1 tbsp oil in a pan. Once the pan is hot, reduce the flame to low and break open an egg.
- Sprinkle some salt and pepper. Now cook for 1 minute until the single side is fried. Carefully remove the egg from the pan and place it over a bread slice.
- On the other bread slice, spread the sauces as a thin layer based on your taste preference.
- Now place the lettuce leaf over the egg. Flip and slide the other bread slice. Press gently and enjoy your toast.
