The tikka can be grilled, broiled, or even pan-fried. No oven, No problem:  If you don’t have an oven, then heat some oil on a tawa (griddle) and pan-fry the marinated paneer cubes till golden. If you have an oven, then grill the marinated paneer cubes in a preheated oven.

You can marinate the paneer the night before and keep in the refrigerator. To infuse the flavors, paneer is marinated with yogurt, spices & herbs for at least 30 minutes. Ingredients

  • For Tikka
  • 2 1/2 tbsp thick curd

  • 1/2 tsp ginger-garlic paste

  • 1/4 tsp turmeric powder

  • 1/2 tsp coriander powder

  • 1/4 tsp cumin powder

  • 1/2 tsp red chili powder

  • 1/2 tsp garam masala powder

  • 1 tsp lemon juice

  • salt as required

  • 1/4 cup onion slice/cubes

  • 1/4 cup capsicum slice/cubes

  • 2 tbsp tomato cubes

  • 10 to 15 paneer cubes

  • 1 tsp butter/oil

  • Tomato Puree
  • 3/4 cup water

  • 2 small tomatoes sliced

  • 7 to 10 cashew nuts

  • 1 tsp ginger garlic paste

  • For Curry
  • 1 tbsp butter

  • 1 cup onion finely chopped

  • 1/4 tsp turmeric powder

  • 1/2 tsp coriander powder

  • 1/2 tsp cumin powder

  • 1/2 tsp garam masala

  • 1/2 tsp chili powder

  • 1/2 tsp Kashmiri chili powder

  • 1 & 1/4 cup of water

  • 2 tbsp fresh cream

  • salt as required

  • 1/2 tsp kasuri methi

Directions

  • Preparing Tikka
  • To a mixing bowl, add 2 1/2 tbsp thick curd, 1/2 tsp ginger-garlic paste, 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1/4 tsp cumin powder, 1/2 tsp red chili powder, 1/2 tsp garam masala powder, 1 tsp lemon juice, salt as required.paneer tikka masalapaneer tikka masala
  • Whisk and mix well until it turns creamy.
  • Add 1/4 cup onion slice/cubes, 1/4 cup capsicum slice/cubes, 2 tbsp tomato cubes, 10 to 15 paneer cubes to this marinade. Mix gently & let it rest for a minimum of 30 minutes.paneer tikka masalapaneer tikka masala
  • Spread 1 tsp butter on a tawa & roast the paneer & veggies on low flame until it turns golden brown.paneer tikka masala
  • flip over and cook till it turns golden brown.paneer tikka masala
  • Paneer tikka is ready. Keep aside.
  • Tomato Puree
  • Heat 3/4 cup water in a pan.
  • Add 2 small tomatoes & 10 cashews. Cover & let it boil for 5 to 7 minutes on medium flame.paneer tikka masala
  • Add 1 tsp ginger garlic paste. Mix well & switch off the flame.
  • Allow it to cool down & grind it to a fine paste. Keep it aside.paneer tikka masala
  • Preparing Curry
  • Heat 1 tbsp butter in a pan.
  • Add 1 cup of finely chopped onion & saute until it turns golden brown in color.paneer tikka masala
  • Followed by 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp garam masala, 1/2 tsp chili powder & 1/2 tsp Kashmiri chili powder. Roast the masala powders for 20 sec over low flame.paneer tikka masalapaneer tikka masala
  • Add in the tomato puree & salt required for the masala.paneer tikka masala
  • Mix well. Cover & simmer over low flame for 1 minute.paneer tikka masala
  • Further, add 1 cup water, and mix well adjusting the consistency as required.paneer tikka masala
  • Cover & simmer until oil separates.
  • Add 2 tbsp fresh cream & the prepared paneer tikka. Coat the tikkas well with the masalas.paneer tikka masalapaneer tikka masala
  • Check for consistency of the masala & add water if required. I am adding a 1/4 cup of water.
  • Cover & and simmer for 2 to 3 minutes or until the flavors are absorbed.paneer tikka masala
  • Add in 1/2 tsp kasuri methi & mix well.
  • Serve the delicious & creamy paneer tikka masala with rotis, naan or ghee rice..
