Ingredients
- For Tikka
2 1/2 tbsp thick curd
1/2 tsp ginger-garlic paste
1/4 tsp turmeric powder
1/2 tsp coriander powder
1/4 tsp cumin powder
1/2 tsp red chili powder
1/2 tsp garam masala powder
1 tsp lemon juice
salt as required
1/4 cup onion slice/cubes
1/4 cup capsicum slice/cubes
2 tbsp tomato cubes
10 to 15 paneer cubes
1 tsp butter/oil
- Tomato Puree
3/4 cup water
2 small tomatoes sliced
7 to 10 cashew nuts
1 tsp ginger garlic paste
- For Curry
1 tbsp butter
1 cup onion finely chopped
1/4 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1/2 tsp chili powder
1/2 tsp Kashmiri chili powder
1 & 1/4 cup of water
2 tbsp fresh cream
salt as required
1/2 tsp kasuri methi
Directions
- Preparing Tikka
- To a mixing bowl, add 2 1/2 tbsp thick curd, 1/2 tsp ginger-garlic paste, 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1/4 tsp cumin powder, 1/2 tsp red chili powder, 1/2 tsp garam masala powder, 1 tsp lemon juice, salt as required.
- Whisk and mix well until it turns creamy.
- Add 1/4 cup onion slice/cubes, 1/4 cup capsicum slice/cubes, 2 tbsp tomato cubes, 10 to 15 paneer cubes to this marinade. Mix gently & let it rest for a minimum of 30 minutes.
- Spread 1 tsp butter on a tawa & roast the paneer & veggies on low flame until it turns golden brown.
- flip over and cook till it turns golden brown.
- Paneer tikka is ready. Keep aside.
- Tomato Puree
- Heat 3/4 cup water in a pan.
- Add 2 small tomatoes & 10 cashews. Cover & let it boil for 5 to 7 minutes on medium flame.
- Add 1 tsp ginger garlic paste. Mix well & switch off the flame.
- Allow it to cool down & grind it to a fine paste. Keep it aside.
- Preparing Curry
- Heat 1 tbsp butter in a pan.
- Add 1 cup of finely chopped onion & saute until it turns golden brown in color.
- Followed by 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp garam masala, 1/2 tsp chili powder & 1/2 tsp Kashmiri chili powder. Roast the masala powders for 20 sec over low flame.
- Add in the tomato puree & salt required for the masala.
- Mix well. Cover & simmer over low flame for 1 minute.
- Further, add 1 cup water, and mix well adjusting the consistency as required.
- Cover & simmer until oil separates.
- Add 2 tbsp fresh cream & the prepared paneer tikka. Coat the tikkas well with the masalas.
- Check for consistency of the masala & add water if required. I am adding a 1/4 cup of water.
- Cover & and simmer for 2 to 3 minutes or until the flavors are absorbed.
- Add in 1/2 tsp kasuri methi & mix well.
- Serve the delicious & creamy paneer tikka masala with rotis, naan or ghee rice..
