What is a Raffaello?
If you’re a coconut fan and have never had a Raffaello in your life, you need to run (not walk) to the nearest store and get yourself some. You will not regret it. They are pure heaven!!
Raffaello is a coconut almond confection made by the Ferrero company. You may be familiar with its cousin, the Ferrero Rocher. The Raffaello contains no chocolate. It consists of a whole blanched almond surrounded by coconut cream in a crisp wafer shell, all covered in shredded coconut.

Ingredients
- Almond Base Cake
3/4 cup Milk
3/4 tbsp Vinegar
1/4 cup Melted Butter/Oil
3/4 cup Sugar
3/4 cup Maida
1/4 cup Almond Meal (Recipe: https://youtu.be/okBkmMRfwPI )
1 tsp Baking Powder
1/2 tsp Baking Soda
A pinch of salt
- Soaking the Cake (Syrup)
1/4 cup thick Coconut Milk
2 tsp Sugar
- Whipped White Chocolate Cream for Layering
3/4 cup Heavy Cream
3/4 cup White Chocolate Chips
- Cake Topping

1/4 cup Almond Slices
1 cup Desiccated Coconut
Directions
- Almond Base Cake
- Firstly, preheat a kadai for 10 minutes over a low flame. Or preheat an oven for 10 minutes at 180 degree.
- In a bowl, add 3/4 cup Milk.
- To this add 3/4 tbsp Vinegar. Mix well. Now curdled milk is ready.
- Add in 1/4 cup melted butter or cooking oil and 3/4 cup Sugar. Mix & combine them well using a whisk.
- Sieve in 3/4 cup Maida, 1/4 cup Almond Meal, , 1 tsp Baking Powder, 1/2 tsp Baking Soda and a pinch of salt.
- Fold and form a smooth batter.
- Finally add in 1/2 tsp vanilla essence & give a smooth mix.
- Now the batter is ready.
- Transfer to a 7″ inch cake mold. Tap twice to remove the air bubbles.
- Bake in a preheated kadai for 40 to 50 minutes over a low flame. Or in a preheated oven for 40 to 50 minutes at 180 degree.
- Insert a skewer and check if the cake is baked perfectly.
- Allow to completely cool down for 3 to 4 hrs.
- Once cooled, demold and cut into 2 equal halves.
- Soaking the Cake (Syrup)
- For the soaking, mix 1/4 cup thick coconut milk and 2 tsp sugar.
- Spread over the cake layers.
- Whipped White Chocolate Cream for Layering
- Using the double boil method, melt 3/4 cup chocolate chips.
- Once melted, add in 3/4 cup heavy cream & form a smooth paste.
- Allow it to cool down in fridge for 1 hr.
- Then using a beater, beat until stiff peaks. Now whipped cream is ready.
- Layering
- Start assembling the first layer of cake. Spread a layer of white chocolate whipped cream and some desiccated coconut.
- Followed by second layer cake.
- Finally give a good coating of whipped cream all around.
- Sprinkle desiccated coconut all over the cake. For the final touch, decorate the cake with almond slices & chocolates.
- Slice & enjoy the cake.

- If you need a high cake, use a 6″ inch pan.
