Once the butter, eggs and sugar mixture is airy and light, the flour is folded into this carefully using a spatula or beater at low speed.

The recipe shared here uses a beater completely for this cake. If you do not have a beater use a whisk to beat the eggs.

Tips to yield a perfect cake:

  • Always, start beating the eggs at low speed. Once the egg starts to foam increase the speed gradually, and beat the eggs until it forms a creamy texture.
  • If you are using the beater to mix the flour, then always use the beater at low speed.
  • Add the dry ingredients gradually and beat them at low speed until it is combined well. If not use a spatula to combine them.

Ingredients

  • 11/2 cup Maida/All Purpose Flour

  • 11/2 tsp Baking Powder

  • 1/8 tsp Baking Soda

  • 1/4 tsp Salt

  • 2 tbsp Milk Powder (optional)

  • 15 tbsp Sugar Granulated

  • 3 Eggs

  • 6 tbsp Oil

  • 3 tbsp Milk

  • 3 tbsp Curd

  • 2 tsp Vanilla Essence

  • 1/2 tsp Vinegar

Directions

  • Preheat the oven for 10 minutes at 160 degree or 320 F.
  • Prepare the Cake Tin
  • Grease oil & place a baking paper in a 8 inch round cake mold & keep it aside.Perfect Vanilla Sponge Cake
  • Prepare the Dry Ingredients
  • In a mixing bowl add 11/2 cup Maida/All Purpose Flour, 11/2 tsp Baking Powder, 1/8 tsp Baking Soda, 1/4 tsp Salt and 2 tbsp Milk Powder (optional).   • Prepare the Wet Ingredients

  • Preparing the Cake Batter

Notes
