A traditional styled ethnic dry curry dish very popular in Kerala. The dish goes perfect with appam, tapioca, puttu, pathiri etc. 

All the Malayalees around the world love the combination of beef and parotta. Kerala Style Beef Roast is neither a curry nor a fry but in between. Cook the marinated beef then slow roast it in spicy masala with coconut pieces and curry leaves.

How to make Beef Roast?

Kerala Style Beef Roast Recipe | Traditional Beef Roast | with step by step photos & video. I generally make use of a pressure cooker to par-cook the beef first. This meat is then mixed with onions, ginger, garlic, chilies & curry leaves that have been sautéed in a generous amount of coconut oil.

The beef is allowed to slowly roast on a low flame till it is dark and melt-in-your-mouth tender. The longer you cook the beef, the darker and tastier the beef fry turns out. A cast iron pan or an earthen pan are the best choices to achieve a dark crust on the meat, but any thick-bottomed pan will work in a pinch. A generous sprinkling of homemade garam masala made with spices like cinnamon, cloves, cardamom, star anise, black pepper, and cumin seals the deal.

Kerala Style Beef Roast Recipe

Instructions

    Firstly marinate 400gms cleaned & washed beef pieces with ¼ tsp turmeric powder, 1 tsp chili powder, 1 tsp pepper powder, ¾ tsp garam masala, salt as required, 1 ½ tsp crushed ginger, 1 ½ tsp crushed garlic, 2 green chilies slit in the middle , fresh curry leaves & the juice of half lemon (around ½ tsp).

    Apply this marinade to the beef pieces using your hands. It is better to use our hands while marinating the flesh pieces. Gently press & rub the beef pieces with the marinade well.

    Now, pressure cook the marinated beef with ¼ cup of water for 1 whistle over a high flame. Then reduce the flame to low & cook for another 5 minutes.

    Switch off the flame & wait until the pressure is released.

    Meanwhile, heat 2 to 3 tbsp coconut oil in a pan.

    Add in one thinly sliced onion & a small amount of salt. Saute until it turns translucent.

    Now add 1 ½ tsp finely chopped ginger & 1 tsp finely chopped garlic.

    Saute well until the raw smell of ginger & garlic disappears.

    Followed by ¼ tsp turmeric powder, 1 tsp chili powder, 2 tsp coriander powder, 1 tsp pepper powder, 1 tsp garam masala, 1 tsp Kashmiri chili powder. Fry the masalas for 10 to 20 seconds over low flame.

    Then add 1 finely chopped tomato & mix it well with the masala paste.

    Once mixed, add the cooked beef pieces along with the stock & combine everything well.

    Allow it to boil for 1 to 2 minutes on high flame. Now add some fresh curry leaves & reduce the flame to low.

    Cover & cook for 15minutes over low flame. After 15minutes you can see that the gravy is thickened & beef is roasted well in the gravy.

    Finally, add in 1 tsp fennel powder which enhances the taste & flavor of beef roast.

    Mix well & switch off the flame.

    Hot, spicy & juicy beef roast is ready to be served with the super combo parotta.

Notes

A secret tip for this recipe is the addition of fennel powder at the end of the masala. It enhances the flavor of the beef roast.
