What is a Conventional Nei Appam?
Nei Appam is one the traditional Prasad prepared for many auspicious occasions and festivals. Conventionally we soak rice, grind it and mixed with jaggery juice along with cardamom which is then poured into paniyaram pan and cooked in low flame till they are golden brown. This traditional way of preparing appam requires soaking of rice. Sometimes, we need to make some Prasad or a sweet instantly without any much preparations like soaking involved, thats when this Wheat flour Appam comes handy.

Instead of brown sugar used in this recipe you can add jaggery also. Wheat flour is mixed with banana paste, rava, cardamom, brown sugar and mixed well to make appam batter which is then poured in paniyaram pan (or appam pan) to make soft and golden brown sweet appam. We can also call this as Instant Sweet Paniyaram. Moreover, this is a quick and easy method and the appam taste as good as our conventional nei appam with the same softness and texture.

Ingredients
2 Bananas
3 to 4 Cardamoms
3 tbsp Semolina/ Rava
1/2 cup Water + 1/2 cup Water
11/4 cup Wheat Flour
1/4 cup Powdered Palm Sugar (or White Sugar)
1/2 cup Brown Sugar (or White Sugar)
A pinch of salt
1/4 tsp Baking Soda(optional)
Oil / Ghee for frying
Directions
- Take a small mixie jar. Cut 2 small ripe bananas and add them to the mixie jar. Followed by 3 to 4 cardamoms.
- Grind them to a fine paste and keep them aside.
- In another bowl, add 3 tbsp semolina along with half a cup of water.
- Mix & allow it to sit for 5 minutes.
- After 5 minutes, you can see that the semolina is well soaked in water. To this add 11/4 cup wheat flour, 1/4 cup powdered palm sugar and 1/2 cup brown sugar. Instead of these kinds of sugar, you can add normal white sugar also.
- Start mixing. Further, add 1/2 cup water little by little & form a smooth batter.
- Finally, add a pinch of salt and 1/4 tsp baking soda.
- Mix & close the batter. Allow resting for 5 to 10 minutes.
- After 10 minutes, heat paniyaram/appam pan, and add some ghee or oil to each cavity/mould. Fill it with the prepared batter. Cook over medium flame.
- Flip & fry both sides until they are golden.
- Insert a toothpick in the centre of an appam to check if it is cooked. If it comes out clean, the appam is cooked. Remove the appam.
- Repeat the same process for the rest of the batter. Usually, the appam in the centre will get cooked faster, so if needed, you can remove the centre one and shift the corner ones to the centre.
