One of first beverages made by the human race to add some extra ‘kick’ to the festivals and celebrations. The red wine has been mentioned in the ancient scrolls and also in the great epics and Bible.

Science Behind Wine Making:

Making wine at home is an art in itself. Though the process of making wine is quite scientific, it still is an art to make a gallon of good homemade wine There’s a science behind the process of fermentation, which simply turns the plain juice of crushed grapes into a gorgeously tasty wine.

Traditionally these  were  made  with equal  quantities of  fruit  and   sugar  and not aged  for  more  than  a  month.  The  end  result  was a  sweet  drink   with minute  traces of  alcohol.   The  same  concoction   when allowed  to  ferment   longer, 3  months  or  more,  develops  more  complex  flavors. 

Things to Keep in mind while making wine:

  • The most important step is to clean, sterilize and dry all vessels and bottles used for making and storing wine. Wash them in boiling water and dry them properly with no traces of water behind.
  • Although ceramic or stone crock jar is ideal for making wine, you can use a glass jar also.
  • Cool the water after boiling and then use it for making wine.
  • Stirring should be done with a sterilized steel spatula or a wooden spatula.
  • Mash the grapes coarsely while stirring.

Selection of Grapes for wine:

The color of the wine depends on the selection & color of grapes. Here we are using thick black purple grapes, which yields a perfect color to the wine. It is better to use black purple grapes than red grapes for wine preparation.

Then start layering the ingredients one by one in a stone crock and close it air-tight. You can use a glass jar instead of stone rock jar also. Store it for 21 days for a perfect wine. This recipe yields a perfect wine in 21 days.

Instructions

    Firstly, let us clean the grapes. For that take grapes in a vessel.

    Add 1/4 tsp tumeric powder and 1/2 tsp salt along with some water to the grapes. Mix and allow the grapes to sit for 15 minutes. Since the grapes are thick the grapes wont absorb water.

    After 15 minutes wash and clean the grapes in runnung water for 2 to 3 times. Separate them one by one. Now, 500 gms of grapes are there.

    Using a cloth or tissue clean the grapes & pat dry them.

    Let us wash and clean the stone crock or glass jar using for wine making. Dry it completely.

    Now start adding the ingredients one by one. Firstly add 250 gms of grapes, followed by 250 gms of sugar, 3 tbsp whole wheat (2 tbsp crushed + 1 tbsp whole wheat), 1/2 tsp instant yeast, egg white of 1 egg, 2 cardamoms, 2 cloves, 1 ” inch sized cinnamon stick, add the remaining 250 gms grapes and 250 gms of sugar. Finally, add 2 cups or 500 ml of boiled water after cooling.

    Fill only 3/4 portion of the wine jar.

    Now mix all the ingredients well for 2 to 3 minutes using a sterilised, cleaned and dried wooden spoon.

    Close the crack and keep it aside from sun light.

    After 3 days, open it and stir it using a completely dried spoon. Stir for atleast 1 minute. While stirring, try to crush some grapes using the spoon. Stir, every alternate day at the same time. While stirring, crush the grapes using the spoon. (Diazepam)

    After 11 days.

    After 21 days, our wine is ready.

    Now strain the wine using a strainer or cloth. Using 500gms of grapes we got 1 ltr of red wine here.

Notes

For the bright color use dark purple grapes.

Do not squeeze the grapes too much while straining.

Always use a clean and dry spoon for mixing the wine.

Stir every alternate days.
