Sweet buns or milk buns are very popular in India. Milk buns are super soft & fluffy bread variety, prepared with all-purpose flour, milk, yeast, and sugar. Moreover, there are many bread varieties, dinner rolls, burger bun, sweet bread, meat-stuffed bread, savory bread, sometimes topped with tutti-frutti, nuts, caramel, jam, cream, etc. Dinner rolls and burger buns are different from milk buns.

It is like a fried doughnut version. The English version of cream buns known as Cornish splits is often served warm as a tea time treat.
Cream Buns, made by making soft yeast bread like dough that is shaped into round balls which are then fried. When cooled it is filled with fresh whipped cream. Much like doughnut dough, it has to be soft. This recipe is an eggless recipe, but yields soft buns without the use of eggs. The whipped cream is made by whisking butter and powdered sugar.

Ingredients
3/4 cup warm milk
3 to 4 tbsp sugar
1 tsp active dry yeast or 3/4 tsp instant yeast
2 cups of Maida/All-Purpose Flour
2 tbsp Oil + oil for deep frying
Salt as required
- For Cream Filling
4 tbsp butter (at the room temperature)
1 cup powdered sugar
Vanilla Essence (Optional)
1 tsp cold milk
Directions
- Activate the Yeast
- In a bowl, take 3/4 cup of lukewarm milk or water. Followed by 3 to 4 tbsp sugar and 1 tsp active dry yeast or 3/4 tsp instant yeast.
- Mix well using a spoon or whisk and close the bowl.
- Keep it aside for 10 to 15 minutes. Allow the yeast to activate.
- Kneading the dough
- Once the yeast is activated add 2 cups of maida & salt as required (1/4 tsp salt).
- Mix it first with a spoon or fork and then start kneading the dough using our hands.
- Don’t add any additional liquid or flour. Knead until a soft dough forms.
- Now add 2 tbsp oil and mix it well with the dough.
- Transfer the dough to a countersurface or cutting board and start to knead the dough for 5 to 10 minutes using the stretch and fold method.
- Our dough is now soft. Place the dough in a bowl greased with oil.
- Proofing
- Cover with a clean cloth or a lid and set aside. Leave to proof until the dough doubles in size. This should occur within 2 to 3 hrs based on the temperature of each place.
- Shaping Buns
- Punch down the expanded dough. Knead and shape the dough.
- Firstly cut the dough into 2 equal halves and then each half into 2 halves and once again repeat the process. Now we got 8 parts.
- Shape into round balls without any cracks.
- Brush some oil over the balls. Cover and allow to rest for another 30 minutes.
- Frying
- Heat oil in a pan for deep frying the buns.
- Now put the balls into the oil without losing the shape.
- Fry the buns one by one over medium flame until it is cooked completely and both the sides turn a brown color. (While frying pour hot oil over the buns using a spoon for an even frying.)
- Allow the buns to cool completely.
- Preparing the cream filling
- Take 4 tbsp butter at room temperature in a bowl.
- Whisk it using a spoon or beater until it turns fluffy and soft.
- Now add 1 cup of powdered sugar little by little and whisk until it turns soft and fluffy.
- Now add 1 tsp cold milk and 2 to 3 drops of vanilla essence. Mix well.
- Making Cream Buns
- When cool, cut in the middle of the bun using a knife and fill with cream.
