This version is a simple and healthy nutritious recipe that can be made with fewer ingredients. Usually, thick and tender drumsticks taste great while making this recipe. Everyone in my family loves this dish. This dish is a great combo for rice as well as rotis or chapathis.

Drumsticks, the most commonly eaten veggie in south Indian states, are the pods of moringa tree and are considered to be great for digestion.

The recipe I am sharing here is a signature dish with very simple ingredients. Give a try for this recipe and I am very sure you will love this combo. Firstly, saute onions and drumsticks which are then cooked in a freshly ground coconut masala paste. One should take care of cooking drumsticks as they get split soon. The secret of this dish lies in the addition of eggs at the end time preparation. Moreover, you can have this recipe without adding eggs also.

Ingredients

  • 3 eggs

  • 1 tbsp cooking oil

  • 2 or 3 green chilies (medium-cut)

  • a clove of garlic crushed or finely chopped

  • 1 medium-sized onion thinly sliced

  • few curry leaves

  • a pinch of turmeric

  • 2 full tsp of meat masala powder (any brand I personally prefer eastern brand)

  • Masala
  • 1/2 cup of grated coconut

  • 8 to 10 shallots

  • few curry leaves

  • 1 tsp cumin seeds

  • 1/4 tsp turmeric powder

  • 1/2 cup of water

Directions

  • Masala Paste
  • Firstly, add 1/2 cup of grated coconut, 8 to 10 shallots, few curry leaves, 1 tsp cumin seeds, and 1/4 tsp turmeric powder in a mixie or blender.egg drumstick curryegg drumstick curryegg drumstick curryegg drumstick curry
  • Grind it to a fine paste by adding 1/2 cup of water & keep it aside.egg drumstick curry
  • Preparing Egg-Drumstick curry
  • Heat 1 tbsp oil in a kadai. Add 2 to 3 medium-cut green chilies (based on your spiciness) and a clove of crushed garlic.egg drumstick curryegg drumstick curry
  • Saute until the raw smell disappears.
  • Then add 1 medium-sized onion thinly sliced & some curry leaves. Saute until it turns translucent. egg drumstick curry
  • Followed by 7 to 10 slices of a drumstick and mix well.egg drumstick curry
  • Now add a pinch of turmeric powder & 2 full teaspoons of meat masala powder. Roast the masala for 30 seconds over low flame.egg drumstick curryegg drumstick curry
  • Then add the freshly ground masala along with 1 1/2 cups of water. Add the required salt & mix well.egg drumstick curryegg drumstick curry
  • Cover & cook until oil separates over low flame. (around 10minutes)egg drumstick curryegg drumstick curry
  • Its time to add the eggs one by one gently. Be careful not to break the egg yolk.egg drumstick curryegg drumstick curry
  • Now cover & simmer for another 5 minutes.egg drumstick curry
  • Yummy egg drumstick curry is ready to be served.egg drumstick curry

Notes

  • Based on your spice level reduce or increase the no of green chilies using.
  • You can use any brand of meat masala powder. But I personally prefer eastern brand.
