This is a Kerala style recipe, a seafood specialty dish in Kerala. Small-sized clams are available plentiful in the backwaters of Kerala. If you live nearby backwaters such as Alleppey, Kuttanad, or Poovar, you are lucky to get your hands on this specialty food. 

How to Clean Clams?

The cleaning part is a little tedious though! But it takes a lot of time because these are teeny tiny. The clam meat available in the market is already boiled and devoid of shells. I am taking 300gms clams here. Add 1 tbsp white vinegar & some salt to the clams. Rub & clean the clams thoroughly to remove the dirt & raw smell from the clams. Wash & rinse the clams in water 2 to 3 times to remove the dirt.

The greyish black grit found inside the clams is to be removed by pressing laterally and then wash it three to four times to remove the sand and dirt.

Ingredients

  • 300 gms Kakka Meat | Clams

  • ½ tsp Turmeric Powder

  • 1/2 tsp Salt

  • 1-2 tbspCoconut Oil

  • 1/4 cup Coconut Slices

  • 1 cup Onion

  • 2 tsp Ginger

  • 2 tsp Garlic

  • 2 to 3 nos Green Chilli

  • 1 tsp Chilli Powder

  • 3/4 tsp Pepper Powder

  • 1/2 tsp Garam Masala

  • Curry Leaves – As Needed

Directions

  • Cleaning the clams

  • Now the clams are cleaned well. Let us start making the clams fry.
  • Clam fry
  • Mix ½ tsp turmeric powder & ½ tsp salt along with the clams in a cooking pan. clams roast
  • Start cooking the mix by stirring it without adding water. Cook it until the water oozed out by the clams is dried well.clams roast
  • Now spread out the clams & make a small hole in the center of the pan. Add coconut oil as required to fry the clams.clams roast
  • Fry the clams over the medium flame by stirring it well.
  • Then add in ¼ cup coconut slices. Mix it well with the clams & fry them.clams roast
  • Transfer this fried clams to another plate & let us start making the masala.
  • Preparing the masala mix for clam
  • In the same cooking pan, add 2 tbsp coconut oil. Crackle some fresh curry leaves & add 1 cup of thinly sliced shallots.clams roast
  • Add the salt required for the masala mix & saute until the shallots turn transparent.
  • Then add-in, 2 tsp finely chopped garlic, 2 tsp finely chopped ginger & 2 to 3 no’s finely chopped green chilies. Saute them until the raw smell goes.clams roast
  • Followed by a small amount of turmeric powder (less than ¼ tsp), 1 tsp chili powder, ½ to ¾ tsp pepper powder & ½ tsp garam masala. Fry the spices for 30sec. clams roastclams roast
  • For a rich color, I am adding 1 tsp Kashmiri chili powder. Mix well & pat the masala at the center of the pan.
  • Now pat the fried clams over the masala spread some curry leaves. Cover & cook for 10min over medium to low flame.clams roastclams roast
  • Then combine the masala mix & clams well.
  • Stir fry the clams for 10 minutes over medium flame. Sprinkle more curry leaves to enhance the flavor. Our clam fry is ready to serve.clams roast

Notes
