This is a quick and easy stir fry recipe that comes together in 30 minutes. It’s perfect for busy weeknights & also for weekend meals, plus it’s lighter and healthier.
Apart from chicken pieces, you can use any of your favorite veggies like carrots, cabbage, capsicum, onion, etc.. In addition to the chicken, we add scrambled eggs to this recipe.
I am using the homemade wheat noodles I had prepared. You can use any packet noodles also. The taste will be similar to our restaurant-style noodles recipe. These foods are popular in India & served in almost all Indo-Chinese restaurants.

Firstly we should marinate the chicken pieces with soya sauce, salt & pepper powder for 10minutes. Then we cook the chicken in a pan without adding water. These chicken pieces are added to the prepared masala paste & tossed along with veggies, scrambled eggs & noodles.

Ingredients
- To Make Scrambled Egg
2 eggs
2 tbsp water
salt as required
1/2 tsp pepper powder
1 tsp oil
- For Making Chicken Noodles
1 tsp oil
250 gms small-cut boneless chicken
1/2 tsp pepper powder
1/4tsp salt
1 tbsp soya sauce
2 tbsp oil
1 tbsp finely chopped garlic
1 medium-sized carrot thinly sliced/julienne cut
1 medium-sized onion thinly sliced/julienne cut
1 medium-sized capsicum thinly sliced/julienne cut
a handful of thinly sliced cabbage
2 tbsp soya sauce
1 tbsp tomato sauce
1 tsp chili sauce
1 tsp sugar
1 tsp vinegar/lemon juice
salt as required
1/2 tsp pepper
Directions
- Making Scrambled Egg
- Firstly let us prepare the scrambled eggs. For that whisk or beat 2 eggs, 2 tbsp water, salt as required & ½ tsp pepper powder in a bowl.
- Heat1 tsp oil in a pan & add the beaten eggs. Mix until it is cooked softly & keep aside.
- Cooking Chicken Pieces
- Marinate 250gm small-cut boneless chicken pieces with ½ tsp pepper powder, ¼ tsp salt & 1 tbsp soya sauce for 10minutes.
- Heat 1 tsp oil in a pan & add the marinated chicken pieces to the pan.
- Cover & cook the chicken in low flame for 5min.
- Cook the chicken until the water is dried completely.
- Our chicken is ready & now let us prepare chicken noodles in the same way as we prepared veg noodles.
- Preparing Chicken Noodles
- Heat 2 tbsp oil in a pan. Add 1tbsp finely chopped garlic & saute for 30 sec.
- Then, add the veggies one by one. Firstly add in 1 medium-sized carrot thinly sliced, 1 medium-sized onion thinly sliced, 1 medium-sized green capsicum thinly sliced & & saute them in high flame for 1min.
- Followed by a handful of cabbage. Saute them for 30sec.
- Add 2 tbsp soya sauce, 1 tbsp tomato sauce, 1 tsp chili sauce, 1 tsp sugar & 1 tsp vinegar/ lemon juice. Mix well & check for seasoning.
- Now, add the prepared scrambled eggs & cooked chicken. Saute them well.
- Add in the prepared boiled noodles and mix gently.
- Toss and mix until noodles are cooked completely.
- At last, add ½ tsp pepper powder. Toss & serve our chicken noodles.
